Holy crap on a log, how the heck is it almost November?! This year is killing me.

October was a pretty low key month, besides our weekend in Tassie, we have hung around home quite a bit.  Which means getting to cook and try new recipes again- woohoo! Here are my favorite 5 new recipes from the month. Hope you like vegetarian meals. 🙂

Another yummy veggie recipe. I made this one week when Travis was out of town since he isn’t an eggplant fan. This is so good though I am pretty sure he wouldn’t even notice the eggplant.

5 Minute Avocado Cilantro Dressing via Pinch of Yum

Sundays have turned into our “big salad” night so when I was looking for a dressing, I found this  recipe on one of my favorite food blogs. It’s easy, delicious and it lasted in the fridge for a week.

Vegan Mac n’ Cheese via Buzzfeed

My friend EmilyAnne made this when I was at her house the other night and it was amazing. It actually tastes like real mac n’ cheese with NO cheese! Travis was skeptical at first, but he gave it two thumbs up too. No cheese, no problem. Also, you just follow along with the video no reading involved. Warning: the music is a little annoying.

I cut out the heavy cream and it was still amazing. Can you tell we’ve been on a vegetarian kick lately? It tends to happen post-vacation.

  • I am not even vegetarian and I want to make every single one of these. I’ve seen that eggplant one before and it just looks soooo good! All that cheese on top 😉 I love gimme some oven. I get stuck in such a rut all the time and hardly try new things. I need to start making out a meal plan and buying the things I need and switching it up, because seriously, we end up eating burritos like 2/3 times a week haha. It’s sad.

    • We aren’t vegetarians either but we just love our veggie meals. Gimme Some Oven is one of my go to food blogs. I love meal planning, mostly because it means I only have to go to the store and the market once at the beginning of the week.

  • oh my word, that last one is a staple in my house. i have never used the heavy cream either, i don’t think. it is SO good. i love the eggplant parm, though i have never made it exactly like that. KC isn’t a huge fan of cheesy dishes, rude, so I eat the majority of these on my own lol

    • I just can’t get myself to buy anything that has the word “heavy” in it, but I probably eat things way more fattening.

  • I’ve had the creamy cilantro dressing on my Pinterest board for a while, but we haven’t made it yet. I’m glad that it tastes as good as it looks and sounds! The caprese quinoa bake sounds amazing too!

    I am all about eggplant right now. It is super cheap at the Farmers Market because everyone has it. I will be thinking about eggplant parm all day now, thanks 🙂

    • Oh man it was so good, when I had leftovers I was seriously getting excited thinking about going home and eating them.

Definitely adding the quinoa fried rice and quinoa bake to the top of my “must cook” list!
